Pineapple Sunday

T-bird, my son has a huge sweet tooth. He’s always asking me to buy sweets. It is no surprise that his favorite fruit is the pineapple, which has a high sugar content. When he asked me to buy a pineapple on 31 December I thought “why not.” Afterall, the pineapple is a sign of welcome/hospitality and what better way to welcome in the new year with this tropical king of fruits.

T-bird just wants to eat the pineapple straight. We’ll be lucky if he uses a fork. But for those who want to cook, here are some ideas.

I may just make these muffins. I’m a huge fan of Baking Bites’ blog. This looks just easy enough for a lazy day.

And if you decide to just eat the pineapple, don’t fret you can still do some pretty interesting things with it, apparently. Happy New Year, sunshine. (And, no that is not me or anyone in my family. Promise.)
